乾炒牛河


1. 牛肉切薄片,用生抽、糖、麻油、胡椒粉和少許清水醃好; 煮熟河粉 + 過冷河瀝乾。(可在粉麵舖買已熟的河粉代替~)

2. 用粟粉撈勻牛肉片,燒熱油鑊將牛肉炒一會後灒酒,炒至8、9成熟,盛起牛肉備用。

3. 再燒熱油鑊,下洋蔥絲和薑絲爆香,加入河粉略炒後,用老抽和糖調味。

4. 牛肉回鑊,同時加入銀芽和蔥段,快手兜勻即成。

  6. 第一次炒? Woo.. look so yummy and tasty! i did try before but unsuccessful cos all rice noodles stick to the wok and very oily!  May i know is it better to use use non-stick wok to fry?

    and yes i use a non-stick pan to fry the noodles. however i think the most important thing is the wok must be hot enough before you put in the in the ingredient and keep stiring until it's cooked.
