自製新鮮牛油



早幾日睇電視學到依個方法,特別親身實驗一下!




1. 預備材料double cream (厚忌廉)。



2. 準備乾淨有蓋玻璃樽一個。


3. 將double cream 倒入玻璃樽內,蓋緊樽蓋。

P.S. 玻璃樽容量一定要超過d
ouble cream 份量,忌廉入樽後要留有大約一半空間。


4. 大力搖晃玻璃樽大約10分鐘至忌廉油水分離,直至見到樽內有一團黃色物體。

P.S.
搖晃玻璃樽過程中段,忌廉會變厚成膏狀,依個時候你搖個樽唔會聽到有任何聲音,不過要繼續搖.......搖到油水分離後你就會聽到"有舊野浸喺水裡面"既聲音嘞!



5. 打開樽蓋就會見到一團團黃色既牛油。


6. 將牛油過濾。




7. 牛油放在器皿內放入雪櫃保存。


8. 過濾去隔出來既係fresh buttermilk (鮮白脫牛奶)。

P.S. 依隻
Fresh Buttermilk 同整scones 時所用既Cultured Buttermilk 唔同!
Fresh Buttermilk 係製造牛油既副產品~
經搖晃後既厚忌廉,當中脂肪 + 水份被分隔

脂肪變成牛油,所以剩低既奶水(
fresh buttermilk)極低脂,
可以直接飲用
;

而用作烘焙既Cultured Buttermilk 係經過加添乳酸菌發酵加工,
所以帶一陣類似yogurt 味道既酸味,
超市買到既
Buttermilk 都係Cultured Buttermilk,用作烘焙麵包蛋糕可增加鬆軟感同時增加風味~

所以
Fresh Buttermilk + Cultured Buttermilk,
係兩樣唔同既野來,唔可以互相取代架!



點解要自製牛油呢? 得閒得滯嗎??
好老實 - 正常情況下我絕對唔會無啦啦走去買盒忌廉搖一輪來整牛油!
不過例如有時整蛋糕買多咗忌廉,
或買咗忌廉後唔得閒整.......
鮮忌廉就算放雪櫃都唔放得太耐,
依個時候,唔想浪費就可以將忌廉造成牛油!

又例如做蛋糕時打忌廉打過咗龍唔用得,
咁又可以繼續再打耐d做成牛油唔洗浪費,
忌廉若加咗糖粉去打就會變成甜牛油~
所以依個可以話係一個防止浪費既後備方法!


NOTE

- 除咗用玻璃樽搖晃依個方法之外,亦可以電動mixer 代勞;

- 可在(3)加入少許海鹽,成品就會係lightly salted butter~

    Amazing lol It was like MAGIC! haha I was so chuffed that I tried it. :)

  12. He was shaking it for a bit and stop and shake it again.
    maybe that's why? He also got rid of the buttermilk half way through.

    hahaha it has turned into something like crappy whipped cream.
    He was very upset lol He is gonna try it again this Sunday :) hehe

    I had the homemade butter on toast today! It was very nice. I put some sea salt in it as well! ^^
