1. 已熟急凍細龍蝦1隻(約350g)溶雪。
2. 龍蝦斬件備用。
P.S. 如果用生猛龍蝦,可請魚販代為放尿及斬件。
3. 燒熱油鑊,下龍蝦件爆炒一會後盛起。P.S. 如用新鮮龍蝦,將龍蝦件拍上一層薄薄生粉後走油,盛起備用。
4. 伊麵1個煮散,撈起盛上碟。(自製伊麵方法click here~)
5. 鑊中煮滾清雞湯250ml,加入撕碎片裝芝士5至6塊煮至芝士完全溶化。
6. 下少許胡椒粉和糖調味; 龍蝦件回鑊兜勻。
7. 粟粉1湯匙和牛奶適量(或清水)拌勻,加入鑊內和龍蝦件一同兜勻至汁稠。
8. 將龍蝦和芝士汁淋在伊麵上即成。(如喜歡較乾身,可放入焗爐烤焗一會! )
