100% homemade香草牛肉漢堡 - 麥當V!
先做6隻芝麻包......
1. 高筋麵粉224g, 砂糖30g, 即用酵母4g, 牛油或豬油20g, 暖水125ml, 牛奶30ml, 鹽4g, 麵包改良劑2g (optional)~ 將所有材料在盆中混合拌勻。
2. 將麵糰放在撒粉的平面上搓揉。
3. 將麵糰搓揉至麵糰光滑,有彈性而不黏手為準。
4. 將麵糰放在塗油大碗中,蓋上保鮮紙發酵。
5. 發酵至2.5至3倍大。
6. 取出麵糰放氣,平均分割成6份。
7. 將每份麵糰搓成圓形,表面掃上清水後再沾上白芝麻,放在己塗油的焗盆,蓋上保鮮紙靜置15分鐘。
8. 放入已預熱焗爐200C,焗約10分鐘即成。
9. 洋蔥香草牛肉漢堡扒做法:- 免治牛肉適量,用磨碎黑胡椒、拔蘭地酒、美極、糖、混合香草和少許清水拌勻醃好。- 加入適量切碎洋蔥拌勻。- 最後加入雞蛋和麵包糠拌勻成泥狀。
10. 將免治牛肉分成等份,搓成漢堡扒。
11. 將漢堡扒煎熟; 芝麻包待涼後打橫切開。
12. 漢堡扒、生菜、紅洋蔥絲和蕃茄片夾在芝麻包內(另可加入芝士片),擠上醬汁即成。
我用咗Asda 既漢堡包醬汁~~~
個扒好juicy 喎, 我都係鍾意自已做 burger and meat patties. 因為唔知道出面用甚麼肉做。This dish is very good for potluck. 有冇加酸瓜啊 ?

咁奇實唔一定要用漢堡包醬汁既~ 可以用普通茄汁、HP sauce、千島沙律醬、甚至他他汁......嘗試吓創造新口味嘛~

麵包改良劑作用係令麵包更柔軟 + 可以keep 住柔軟耐d! 若唔用麵包改良劑,可以改用湯種會有同樣效果,亦可以完全唔用~
Your homemade burger looks great & yummy. My husband loves burgers so much, I'm going to follow your recipe to make a huge burger for his birthday. It's my first trial to make bread, hope that it will be ok... Anyway, I want to ask what's the Eng name of 高筋麵粉in UK? And can I get 麵包改良劑 in supermarkets like tesco or asda? Also, how many eggs did you mix with the mince beef? Thank you. =)
回覆刪除[版主回覆11/04/2011 19:04:04]finally, re how many eggs i used for the beef patties, it depends on how many patties you are making and how big they are. i used just one egg, it's ok as long as the mixture is not too moist after you mix all the ingredients together.

Mrs T, after 2 attempts, I successfully made a 9-inch burger last Thurs! But the bread was a bit too thin and the beef was thicker than it. =) BTW, when will you try to make swiss roll again? I'm waiting for your recipe ah. =)
