做8個雞批......
批皮:
1. 中筋麵粉 (plain flour) 224g, 牛油112g, 糖霜30g, 吉士粉2茶匙, 暖水70ml。
2. 將(1)所有材料搓勻成光滑麵糰,用保鮮紙包好放進雪櫃中冷凍30分鐘。
搓批皮麵糰時一定要輕手,批皮才能做得鬆化! 若太大力會搓出麵粉筋性,令批皮變硬。
餡料:
3. 雞上脾肉300g和洋蔥1個均切細丁; 雞肉丁用胡椒粉、雞粉和糖略醃備用。
4. 燒熱油鑊下洋蔥丁爆香,再下雞肉丁炒熟後,加入金寶忌廉蘑菇湯1罐兜勻煮滾; 盛起洋蔥雞肉待涼備用。
可自煮白汁來代替金寶湯~ 白汁做法請參考"白汁雞皇食譜"!
5. 將批皮麵糰平均分為8份 (最好用磅量度!); 再將每份麵糰分為批底 + 批面2份,批底放入鍚模中央,由底部開始按壓,注意批皮厚度要平均。
6. 釀入洋蔥雞肉餡料。
7. 鋪上批面,利用膠刮將批邊接合。
YEAH~~~~~~~~~~~
雞批係我早在開"V女廚房"之前幾年,一直都好想整好耐既食物!
不過唔知點解一直得個唸字但無實際行動......(應該係因為懶~~~~~~~~)
雖然雞批並唔難做,不過因為今次係第一次整,我預咗批皮部份未必會做得好,所以今次小試牛刀只做8個~
估唔到第一次就整到鬆化非常既批皮喎!!
焗緊雞批時既香味,令老公即時預訂4隻聽日帶返工做lunch;
一出爐熱辣辣我即時搞掂咗2隻; 連啱啱食完2個Burger King 既老公都忍唔住食咗1隻......即係聽朝我得返1隻做早餐!
雞批好得喎!

I make the pie today again but the dough texture is very soft again, so I really don't know what I went wrong;( as the dough so soft so is hardly to make the shape of the pie ;(
