蕃茄牛肉


1. 牛肉約250克切薄片,用少許水、胡椒粉、生抽、紹酒、糖和麻油醃好備用。

2. 蕃茄3至4個切角。

3. 燒熱油鑊; 牛肉加少許粟粉拌勻,下鑊炒至約八成熟後盛起備用。

4. 再燒熱油鑊爆香蒜茸,加入蕃茄角炒至開始腍。

5. 牛肉回鑊炒勻,加入茄汁、糖和喼汁少許調味兜勻即成。

變化: 蕃茄雞柳

  4. My man will buy fillet steak but I think it is toooooooooo expensive. But I will peel off tomato skin for this dish.
    [版主回覆02/13/2009 07:47:00]yes fillet steak is good for stir fry, but i think it's too expensive too~ however rump and rib eye are good as well! and they are much cheaper~~~
     
    i dont peel tomatoes as i want to keep them in shape!

    [版主回覆04/11/2010 16:58:00]我自己既方法係 (1) 切牛肉時順紋來切; (2) 醃牛肉時一定要加少少清水; (3) 炒之前先加粟粉撈勻佢~

  6. 唔好意"樹", 又係我依個問題中坑....
    想問問平時出街食果d滑蛋蝦仁, 滑蛋牛肉果d滑蛋係點整, 我驚我整整下變哂炒蛋.....無哂d汁....
