V媽媽靚正餸2009 - 3月13日
蕃茄薯仔煲豬筒骨; 魚肉釀辣椒; 清蒸撻沙; 薑蔥班頭腩 & 卥味配燻蹄
返到香港當日,我陪V媽媽去街市買餸,所以即晚就可以享用到久違既V媽媽靚餸! 仲係樣樣都係我鍾意食既呢~~~~
喺街市見到有新鮮游水赤米蝦,即買咗一大袋返屋企白灼~ 食赤米原來唔用辣椒豉油仲鮮甜呀!!!
因為V爸爸唔食得蝦,所以我 + V媽媽share 來做飯前下午茶!
快靚正! 燒滾水後放赤米落去,蝦一變咗紅色就可以即撈起架嘞! 前後5分鐘都唔洗~~~
用醃鹹咗既豬筒骨煲蕃茄薯仔湯特別好飲! (可惜我依度冇豬筒骨賣......)
由於時間既關係......是晚加料既卥味 + 燻蹄都係買既!
其中一種我最鍾意食既魚 - 撻沙~
非常惹味既薑蔥班頭腩~
依味魚肉釀辣椒係我其中一味至愛!!
鯪魚肉買返來後加入蔥粒,搞拌至起膠~
青辣椒開半去清核,釀入鯪魚肉~
再燒熱油鑊,煎香至金黃就得架嘞!
So lucky to have a good mama!!

魚肉釀辣椒 + 薑蔥班頭腩 are my favorites as well....

我都鐘意整鯪魚肉架 , 不過大工程 , 要返去自已 "啄"呀 !

Mrs T, I'm not trying to pleased you but I found your cooking skills excellent. Look at Mr T, he is the best evidence! Just take a look at his photos before and after marriage! Who said that you haven't inherit the cooking talent of V mama?

醃鹹咗既豬筒骨<<<<<係唔係把豬筒骨出左水後再醃一醃先拎去煲?咁做係唔係好咪啲??
回覆刪除[版主回覆04/16/2009 23:26:00]豬筒骨係生醃架! 叫豬肉檔斬件後 > 洗淨瀝乾水 > 加好多粗鹽撈拌 > 放入雪櫃醃過夜 > 煲湯前沖去鹽再汆水~
等我下次嘗試下先!

我奶奶煮餸又係超好食, 我老公好鐘意食佢整嘅釀青椒, 不過我奶奶唔係釀鯪魚肉, 佢係自己打豬肉同蝦肉, 但我就鐘意食鯪魚肉喇!

我都好鍾意赤米,用嚟打邊爐 very good,可惜唔係成日有,依家D基圍蝦除咗啖啖肉真係一D蝦味都冇,同赤米冇得比
