湯種伯爵奶茶吐司


我一向好少飲西茶~  不過屋企一定有伯爵茶包 (Earl Grey)以備不時之需! 鍾意earl grey 味道清香獨特,第一次飲已經愛上咗~~~

 今次再跟"65C湯種麵包"整伯爵奶茶吐司~

平時飲開Harvey Nichols 既earl grey,不過一早飲哂未有時間去入貨......

 所以今次買咗Waitrose 出品~ 一打開包裝,一陣強烈香味直衝鼻哥窿!!!

1. 先預備湯種。(湯種做法~)

2. 乾材料: 高筋麵粉285g, 糖43g,  鹽4g, 快速酵母6g~

3. 濕材料: 細雞蛋1隻(全蛋), 動物性鮮奶油 (Single Cream) 42g, 牛奶28g, 湯種90g, 天然牛奶香料4g (我用雲呢拿香油代替!)

4. 將乾材料和濕材料放入大盆內先用慢速拌勻。

5. 材料拌勻後改用中速拌至有筋性,加入無鹽牛油22g,先用慢速拌勻後,再改用中速搞拌。

6. 搞拌至麵糰可拉開薄膜,破洞邊緣為光滑狀為止。

7. 將伯爵茶包2個剪開加入麵糰內,用慢速搞拌均勻。

8. 將麵糰封好,發酵40分鐘。 (溫度28C; 濕度75%)

9. 取出麵糰,將麵糰4邊各向中央摺一下,再封好靜置室溫發酵10至15分鐘。
10. 將麵糰拉長 + 壓扁,由上而下捲實。

11. 捲至尾將麵糰尾部拉爛,再往下捲 + 收口向下; 吐司模內層塗油,放入捲好的麵糰進行最後發酵至約吐司模八成。(此步驟圖片做法請參考方包食譜~)

P.S. 書中係將麵糰一分為二,分別捲成造型! 但我唔鍾意分開兩舊~

12. 包面塗上蛋液,放入已預熱焗爐170C,烤焗25至30分鐘至表面金黃即成。

    伯爵奶茶吐司真係未試過,應該唔錯

  2. 嘩!!個包搓得好靚呀~~~其實我而家搓包都搓唔到有薄膜,因為搓到好攰,我見搓到差唔多我就整架喇,所以D包出黎唔係咁靚,好想買部麵包機唔洗咁煩...
    [版主回覆01/21/2010 20:12:00]我會先用hand mixer 打成糰,打到咁上下就改用手搓~ 都只係十零分鐘! 我唔會買麵包機,揼哂材料入去禁吓個制就搞掂,都唔好玩既!

  8. I had a cheap hand mixer in my mom's home. You know, It's very very very good. I used this cheap one for 5 years, and it's still working.
     
    It's too bad that it doesn't have dough hooks

    just a few months ago, one of the egg whisks broke a little bit......that's why i bought the kMix~
