自製燒鴨


1. 鴨1隻(中)去除pat pat 附近的肥膏,洗淨並用廚房紙抹乾內外。

2. 將丁香1茶匙、拍碎蒜頭和八角放入鴨肚內。



3. 五香粉1湯匙、沙薑粉1湯匙、鹽1/2 湯匙、玫瑰露酒少許混合拌勻成醃料,將全部醃料放入鴨肚,用手搽勻整個鴨肚,再用鴨針(圖)將鴨肚縫埋合。




4. 200ml 清水加入同等份量(200ml)的米醋,燒滾後再加入麥芽糖100g 拌勻。

5. 水一定要大滾,淋在整隻鴨上,至鴨表面微黃,將鴨掛起在通風處風乾。(最好過夜!)

6. 預熱焗爐180C 約15分鐘,放入鴨 (鴨胸朝上~),焗約1小時至鴨全熟 + 鴨皮金黃,取出待涼斬件即成。

    Your blog name sounds so french!  Thanks so much for your BBQ pork and duck recipes which are extremly helpful to me.  It's because I live in south France and it has been years that I long to eat them.   Now, with your given recipes, my dreams come true!

  9. HI, 想問, 家用焗, 鴨要轉身焗, 全程(鴨胸朝上~)? 如轉身, 會漏汁嗎 ? 只肚繨針? 點解要2 枝 ?

    用2枝針係因為 - 英國依度買到既全鴨,係冇頭既! 所以要一枝比肚,一枝比頸位囉!
     
    係呀! 我切架~ 切好慢慢砌靚佢啫!

  12. 你好勁呀,我都想試整,不過我屋企個焗爐係焗蛋糕既SIZE,會唔會太細,唔夠位。

    唔好意思呀! 因為我一向用開一座既大焗爐,所以我唔係好清楚妳用果種細成點~ 我唸或者妳可以試試整半隻 (另外半隻鴨可以入冰格嘛! ),我唸分別應該唔會太大!
